This magical brew is also based on a pale bock beer The strong brew was made with the hop varieties Saphir, Hallertau Tradition and Mandarina Bavaria hops and balances the fullness of the hops with two different malts The brewery borrowed a white wine barrique barrel from the winemaker for barrel aging Dried orange peel and orange thyme were added to the beer during the 18-month aging process The latter is characterized by its herbal spiciness and unusual fruity note and comes from the brewery's beer garden
After resting in the cellar, Simsalabim has a beguiling 10.0% alcohol content and seduces with a subtly balanced harmony of soft sweetness and fruity acidity Thyme and orange are the leading aromas and go hand in hand with the strong tartness of the bock beer
