The distillate is pure-toned and delicately fruity, with a character reminiscent of mountain ash/yellowberry. The distillate has a fine wood note, which emphasizes the fruit very nicely.

Production
As with our Wild Serviceberry Brand y, the berries are blended and distilled without stones, which prevents the typical marzipan aroma that comes from co-processing the seeds/stones. The berries are gently cold fermented. After the careful double distillation, the distillate was stored in a fresh oak barrel for 24 months. Only about 40 bottles are bottled annually.
