Kiln-dried over Appenzell fen peat, the result is a herbal, earthy smoke profile with pronounced phenols. After five years in beer barrels, it is matured for two years in Limousin oak cognac barrels: Its coarse pore structure accelerates oxidation and combines the distinctive smoke with vinous fruit notes and fine rancio. The result is a powerful yet elegantly balanced whisky.
