With its latest collaboration partner, Dutch brewery Oedipus is setting completely new standards in terms of beer-related cooperation: instead of sitting down at a table with other brewers, the team has brought the researchers from the world's first museum for microorganisms on board Micropia is a place where everything revolves around the life of microscopic creatures and presents them in a surprising variety Because beer is home to a whole host of active microorganisms, this unusual pairing came about
Together with the experts from Micropia, the brewers took a walk through the Amsterdam Royal Zoo ARTIS and found what they were looking for in the orchard: Wild yeasts are found on leaves, fruit and bark and the team chose lactic acid bacteria and a yeast culture called Pichia This unique combination of hand-picked yeasts gives the beer an elegant acidity that brings juicy notes of apricot and peach The result was married with a Pale Ale to give it a harmonious bitterness
