In Monemvasia, in the southwest of the Peloponnese, this top oil is malaxed at 22° C for just ten minutes.
Filtering, with 18 filters, takes place immediately after extraction! This preserves the aromas for longer.
The extraction takes place in our own small MORI mill. This is located in the grove!
There is no quicker way to get olives to the mill. Every afternoon, the olives harvested that day are processed. This guarantees that the freshly harvested fruit is processed in the best possible way.
With a very low acidity and a high biophenol value ( 596 mg/kg ), this is probably one of the most outstanding oils in Greece!

My name is Viron and I am the founder of DELINIO. I'm originally from Stuttgart, Germany, but after studying economics I started working in Greece - my parents' homeland. Greece is legendary for its fantastic olives and the amazing oils that are extracted from them. Thanks to my travels, I was able to get to know the best products made by farmers who have been growing these fruits for generations and extracting them into very special oils using traditional methods and a lot of love and care.
