We spoke to Lorenz Humbel, the kirsch guru from the canton of Aargau, about the sensory significance of different yeasts for fruit brandies. The word "spontaneous fermentation" was mentioned a few times, a word that has appeared more frequently in the vocabulary of vinophile hipsters in recent years, but rarely in connection with spirits.

What sounds new and exciting was standard not so long ago. Today, pure yeasts are generally used for alcoholic fermentation. Fermentation is more stable, controlled and efficient.

Unexpected results, as with some spontaneous fermentations, are largely avoided, but differentiation and identity are lost. The result is a uniform taste.

Lorenz Humbel poured samples of his single-varietal Kirsch, the mash of which was fermented with different yeasts in each case. The varying complexity of taste, depending on the yeast culture, was surprising. The brandy from the spontaneously fermented mash of the Basler Langstieler left us in euphoria. After extensive tasting, it was clear that we wanted to introduce this brandy to the Freimeisterkollektiv.
