Anyone who has made the mistake of biting into a wooden pear will certainly not make the same mistake a second time. The original form of our modern pear trees bears fruit that is extremely bitter, hard and sour. It takes a true artist to extract the flavor from these stubborn fruits. Axel Kiesbye is such an artist. He is able to coax the flavor out of the wildest plants and transport it into a beer. The nature lover has specialized in so-called forest beers. These specialty beers all have very special ingredients that Kiesbye discovers on his forays into the Austrian wilderness.
The Holzbirne forest beer is the 2018 vintage beer and was brewed with pear blossoms and pear leaves, as well as chopped and roasted pear wood and the dried fruits of the wood pear. Kiesbye collected the ingredients from pear trees in the Wildalpen forest district in Styria. After the brewing process, the beer matures to its full glory in the storage tank. The result is a complex beer that uniquely captures the character and special nature of the wooden pear.
Waldbier Holzbirne flows into the glass in a clear golden hue and forms a white head. On opening the bottle, the beer exudes a wonderful potpourri of fine aromas. Light malt and freshly baked cookies combine on the nose with the delicate aroma of pear blossom, a hint of herbs and creamy honey to create a tantalizing blend. On the palate, the beer is delicately tart with beautiful woody notes, floral hops and a soft caramel malt base. A hint of vanilla gives the beer a certain extravagance.
