We also use the delicious Italian Amalfi lemons when distilling our KALAND Kümmel. However, only the peel of the fruit is used there. We always used to dispose of the rest. But that hurt our souls: wasting food is a no-go for us both at home and at work.
So we decided to make a lemon liqueur from it. And lo and behold, the liqueur has become an insider tip and our customers' favorite. It is based on a macerate made from lemon peel and other citrus fruits. The juice collected from the distillations is frozen - some of the solids then flocculate - and then used as a "dilution" to bring it down to 20% vol.
The first variants were still naturally cloudy - unfortunately this flocculated over time, so we have now opted for a clear variant.
