Harvesting is not really much fun...
Blackthorn is a wild type of plum that grows on bushes with lots of thorns. And you have to harvest them after the first frosty nights so that they don't develop tannins. So it's already colder. We pick the sloes ourselves or buy them locally. Later, when bottled, the sloe spirit tastes sweet and delicate, with a hint of marzipan.
We macerate the fruit for a comparatively long time. The fruit is only partially macerated so that we do not get too many of the bitter substances from the seeds into the distillate. After distillation and blending, the spirit rests for a few weeks before we bottle it.
