More information about Marge's quince jelly
Quinces are very special fruits for me. The fruits ripen in the fall and resemble apples or pears. They have a fuzzy skin, which clearly distinguishes them from their relatives. Nowadays, quinces are fairly unknown, but our mothers and grandmothers used to make quince purée and quince bread from them in winter. The quince is also a fruit with great healing powers. It helps against colds and soothes inflammation of the skin. Of course, I found a wonderful recipe for quince jelly in my grandmother's cookbook.
Taste
Quinces cannot be eaten raw. Although they are not poisonous, they are usually hard, woody and bitter. The flesh only develops its aromatic, tart flavor when it is cooked. As with all my jellies, I also make the quince juice by steam juicing. I refine the juice with my favorite vanilla from Tahiti and season everything with a little lemon juice.
Served:
I like to refine my Friesentorte with quince gelée. But the jelly also tastes great with semolina dumplings, scallops or liver.
