When people talk about vinegar as a luxury food, they usually mean balsamic vinegar. No other type of vinegar has such a good "reputation for enjoyment". The Italian term balsamico is identical to the German balsamic vinegar. It is a special type of vinegar that consists of a mixture of wine vinegar and a boiled-down fruit must (usually grape must). This is how the white balsamic variety was created.
Taste
The addition of grape must makes balsamic vinegar taste sweeter than traditional vinegars. Balsamic vinegar develops its aroma particularly well through long storage. The taste becomes more complex and at the same time smoother.
How to serve:
