"Molienda manual con mazo" means that all the agaves are processed entirely by hand with a wooden mallet to separate them from the fibers. This means that no mill or other equipment is used in this first production step by master distiller Margarito Cortès. This method of production "Molienda manual con mazo" is already 300 years old. As the name suggests, Barril is the agave variety.
This elaborate form of agave preparation perhaps also explains (?) that the bottling is only 30 liters.
About the Barril agave variety
Barril is a wild agave and can mature for between 15 and 20 years. It belongs to the so-called Karwinskii family, to which the Madre-Cuishe (or simply Cuishe) agave variety also belongs and is used far more frequently in mezcal. Barril grows in tall, barrel-like stalks, which can also be used as a protective fence on farms or between farms.
