Incidentally, the name Metis stands for Klein Constantia's collaboration with Pascal Jolivet, who produces his wines using unusual methods. The symbol of this collaboration is the flower on the label, which is a cross between the national flowers of South Africa and France. The Klein Constantia Metis Sauvignon Blanc was created through spontaneous fermentation and matured on the lees for twelve months, allowing the unique terroir of Constantia to develop wonderfully.
