PANAMÁ-PACIFIC RUM's journey begins at Las Cabras Distillery, a Panamanian sugar mill built a hundred years ago in 1919. Under the vagaries of changing global sugar geopolitics, the property fell into a state of neglect and was slowly taken over by the jungle.
In the 1990s, the new owners recognized the property's potential and, during restoration work, found an exciting historical relic: completely overgrown, they discovered a copper-and-brass still from 1922, made by American & Brass Works of Cincinnati, Ohio. This was the rebirth of Las Cabras Distillery and a new world-class rum was ready for the world!
- From sugar cane from Provincia de Herrera, to distillation & aging, to bottling: 100% Panama.
- within 24 hours of harvest, sugar cane is processed into rich sugar cane molasses
- natural pineapple yeasts are used for the subsequent fermentation process
- the rum legend and Cuban-born Señor Francisco 'Don Pancho' Fernandez Perez is responsible for the distillation.
- after the distillation of the mash in the historic Copper Coffet Column, PANAMÁ-PACIFIC RUM matures for three years in freshly charred Kentucky Bourbon barrels
- only the rums worthy of longer aging are then filled into toasted Tennessee and Canadian Rye whiskey barrels.
- This imparts gentle vanilla, caramel and butterscotch notes to the distillates without masking our balanced essential rum flavors

Vanilla, coconut, banana, cherry-almond cookie.
TASTE
Smooth caramel butter, cherry almond, then crushed cacao nibs. Delicious dessert notes fade into pleasant wood flavors on the finish.
