The Tequilas from the cultivation areas in the region of Jalisco captivate by their partly centuries-old tradition, the individual taste of specially cultivated agaves from different locations and the characteristic distillation technique of the distilleries. The exclusively selected tequilas represent the unique, personal craft of the Master Distiller: so their NAME really becomes an ART!

"I'm not in the business of making fancy bottles - I'm in the business of making great Tequila" This sentence comes from Felipe Camarena, the Master Distiller of Destilería El Pandillo. Here, at an altitude of over 2,000 meters in the remote mountain town of Jesús María, Felipe Camarena makes this bright, aromatic tequila from agave plants grown at high altitudes in the agave region around Tequila

Felipe's Destilería El Pandillo is arguably one of the most forward-thinking, innovative and sustainable distilleries in the industry.

After selective harvesting, the agave plants are slowly roasted in traditional brick brick kilns. Then the agave hearts, or piñas, are ground in a tahona - as the heavy stone wheel is called - to produce a mash that is fermented along with its fibers. This produces a richer, fuller flavor.

After fermentation, Felipe carefully distills the Seleccion in two passes in small copper pot stills. The distillate is about 56% alcohol by volume. Alcohol, before it is brought to drinking strength with pure rainwater as well as a mineral-rich water from its own source.
