What is tequila?

Tequila is a special form of the agave spirit mezcal. The spirit takes its name from the city of the same name where it is distilled. The city of Tequila is located on the Mexican Pacific coast, in the Mexican state of Jalisco.

The history of tequila

The history of tequila probably begins in the 16th century, when the Spaniards produced it in the town of the same name. The blue agave grew abundantly there and was used for many purposes. The drink pulque was also made from it. The Spaniards probably made a distillate from it. However, production was banned by the government.

You wouldn't be able to buy tequila today if the Spanish hadn't made it in the forbidden area. When Mexico gained independence in 1821, local producers expanded production. A similar drink to tequila is sotol, which is produced in a similar way to tequila and is the national drink of the Mexican state of Chihuahua.

Tequila at a glance

Tequila is regulated by the Consejo Regulador del Tequila A.C., which monitors compliance with legal standards on behalf of the Mexican government. There are two quality levels:

  • Mixto: At least 51% of the sugar comes from the Weber agave, the rest from other sources such as cane sugar. Mixto is usually transported at 55% alcohol and only later reduced to drinking strength.
  • 100% agave azul: May only be bottled and shipped under the supervision of the regulatory authority. You can also buy this special tequila directly from us online.

Tequila varieties

There are also differences in tequila in terms of ageing. If you want to buy premium tequila online, you can choose between five different degrees of maturity. In Mexico, Spanish designations are used for maturation, while English designations are used for export:

  • Blanco, Silver or Plata is the name given to a clear, transparent tequila that is bottled immediately after distillation.
  • Gold, Joven or Oro is a mixture of Tequila Blanco and aged tequilas. Aged tequila can be used in various degrees of maturity. To give this tequila a softer or more mature taste, it can be enriched with sugar couleur, sugar syrup, glycerine or oak wood extracts up to one percent of its weight.
  • Aged or reposado is a tequila that has been stored in oak barrels for at least two months. You can also get this tequila in our store.
  • Extra-aged or anejo tequila is tequila that has been stored in oak barrels for at least one year. However, it may not be stored for longer than three years. The capacity of the container must not exceed 600 liters. Water is used to regulate the alcohol content to drinking strength.
  • Finally, there is ultra-aged or extra anejo, which must be stored in oak containers for at least three years. This category is still fairly new and was only introduced in March 2006.

Tequila - Frequently asked questions & answers

How is tequila made?

The heart of the blue agave, the pina, is used to make tequila. After harvesting, it is cooked under steam, traditionally for 24-30 hours or faster in autoclaves (8-14 hours). This converts the sugar in the agave into simple sugars. After cooking, the pinas cool for 36-48 hours and are crushed to squeeze out the agave juice.

Depending on the variety, the juice is left pure (100 % tequila) or is supplemented with up to 49 % foreign sugar for Mixto Tequila. The juice ferments for 1-12 days, during which time yeast converts the sugar into alcohol. Modern processes shorten the time to one day. This is followed by a double or triple distillation, which takes 4-8 hours to produce clear tequila. For matured varieties, the tequila is stored in wooden barrels.

Only the blue agave from Jalisco, Mexico, which is aged for at least ten years, may be used for tequila. You will only find products made from this high-quality agave in our online store.

How much alcohol does tequila have?

How do you drink tequila?

What makes tequila from Mexico so special?

Tequila must meet another requirement to be worthy of its name: it must not be made from just any type of agave. Only the blue agave, which bears the Latin name Agave tequilana, may be used for the production of tequila. It is also known as Weber agave.

What are the best tequila cocktails?
